Updated 12/25/2012: I changed things up by two things. One - I resisted the urge to flatten them down and they deflated on their own. They are so much better this way! I also used this sparkly sugar which makes them look just like the bakery bought ginger molasses chews. So pretty!
After studying for 3 months prepping for my principles of engineering exam, I promised my fiancé I would make him his favorite cookies, ginger molasses cookies. The first time he had ever tried these cookies was when I baked them. He loves them! I have made this recipe for over 10 years now. My mom and I have a tradition of baking cookies together for Christmas. I added this recipe to our collection one year and have made them every year since.
Here's the ingredients and quick directions for copying and pasting to your digital cookbook (I use Evernote as my digital cookbook!) or printing. I have more detailed directions with pictures below.
Ingredients
Cookies:
- 2-1/4 cup White Flour
- 2 teaspoon Ground Ginger
- 1 teaspoon Baking Soda
- 3/4 teaspoon Cinnamon
- 1/4 teaspoon Cloves
- 1/4 teaspoon Salt
- 3/4 cup Butter
- 1 cup White Sugar
- 1 Egg
- 1/4 cup Molasses
Topping:
- 1/4 cup White Sugar or Sparkly Sugar
Directions
- Preheat oven to 350 Degrees F.
- Combine flour, ginger, baking soda, cinnamon, cloves and salt. Set aside.
- Cream butter and sugar until soft and fluffy.
- Add egg and molasses; mix well.
- Add flour mixture a little at a time and stir in.
- The dough should be at a consistency that you can roll it with your hands into balls. Add more flour if it is too sticky.
- Roll into 1" balls, then roll balls in the remaining sugar.
- Bake for 8-11 minutes. Do not brown! Cookies should be almost under cooked in the middle.
- Let cool for 2 minutes, then transfer to a cooling rack.
